Sweet Potato Fries

Ahhhh, french fries... I love fries. More specifically, I loved McDonald's french fries way back when, before they went and changed their oil years ago... Remember the "squishy" fry that everyone fought over? Yeah, I think I knocked my brother out over a few back when we were kids. They were the best. Then they changed their oil, and I haven't really liked them since. Their new thing is their golden, crispy, delicious fries... Yeah... I think not. In fact, I really never cared much for McDonald's, even pre-paleo. I worked there as a teenager for 4 years, and ate their very rarely, and when I did, it was only if I was dying of hunger and didn't have any money to get food elsewhere. So thanks McDonald's, that was just one of many things you ruined, in addition to your GMO's, weird ingredients, etc. Sweet potato fries seem to be all the craze these days in the paleo world, and pre-paleo, I was never much of a fan when they first started getting big at chain restaurants. I tried them at a local Huddle House a few years back, and they were also crispy, on the sweet side, and another weird taste I couldn't put my finger on. No thank you... But then when I went paleo, seeing as how I can't eat potatoes, I started playing around with these little babies, and well, I found a happy medium. And they even remind me of the McDonald's "squishy fry" that was so coveted by me and my brother!


Prep-time: 15-20 minutes (or however fast you can cut fries)   Cook time: 20 minutes
Servings: 8

Ingredients:
- 4 Large sweet potatoes
- 3 Tbls Extra-Virgin olive oil
- Himalayan pink salt
- Freshly ground black pepper
- Thyme

Directions:
1. Preheat oven to 425°F
2. Wash and peel sweet potatoes.
3. In a large bowl, cut fries with your mandolin, or if you like a challenge, by hand.
4. Once you have all your fries cut up, add 3 Tbls of EVOO, and mix with your (clean) hands, until all fries are well coated.
5. Grease a large cookie sheet, and spread your fries evenly on it.
6. Evenly sprinkle on your Himalayan pink salt, pepper, and a generous amount of thyme over your fries.
7. Pop those babies in the oven for 20 minutes.
8. Take them out and enjoy. Don't knock your brother out over them, there's enough for everyone.  ;)
